Remember way back in the day before kale exploded – not literally, of course (gather ’round, my dear children, and let me tell you the story of the Great Kale Explosion of 2014) – and people used to make smoothies with regular fruits like bananas and strawberries and blueberries? Talk about vintage, am I right? Smoothies that weren’t green! They used to be a thing!

Berry-Banana Smoothie Muffins (75 of 750)

Makes 44 mini-muffins

  • 1 cup chopped strawberries
  • 2 tbsp sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup mashed ripe banana (1 medium banana)
  • 1/4 cup vegetable oil
  • 1 cup blueberries
  1. Preheat oven to 375F.
  2. In a small bowl, combine strawberries and 2 tbsp sugar. Let stand for 15 minutes to let strawberries release their juice.
  3. In a large bowl, whisk together flour, baking powder, salt, and baking soda.
  4. In a medium bowl, whisk together 1 cup sugar, eggs, banana, and oil until well blended. Stir in strawberries with juice until blended.
  5. Add the egg mixture to the flour mixture and stir until just blended.
  6. Divide batter equally among prepared muffins cups. Press in two blueberries into each muffins cup.
  7. Bake 10-15 minutes or until tops are golden and a toothpick inserted in the center comes out clean. Let cool in pan on a wire rack for 5 minutes, then transfer to the rack to cool.

Not that I’m really one to talk, because I do enjoy a nice spinach smoothie, but sometimes I want to drink something that isn’t the color of grass, you know? Does white spinach or white kale exist yet? Why does asparagus get all the fun?

These are the kind of muffins that make you feel healthier just looking at them. They have three, three!, different types of fruit in them – that covers a whole section of the food pyramid (or food plate or whatever they changed it to now), doesn’t it? I was kind of afraid that they would taste predominantly like blueberries, but they’re surprisingly well balanced. You can definitely taste all the flavors, and yes, there is a lot of blueberry by virtue of the fact that they take up so much more space in the muffins compared to the other fruits, but it doesn’t mask the bananas or strawberries, thankfully. I know you’ve got all the antioxidants and whatnot, blueberry, and you have every right to have an ego, so thanks for letting your fellow fruits have their moment to shine.
