Yesterday was an off-day in the kitchen. You know the kind – where you spill things and burn a sauce and add too much butter (even though there’s really no such thing) to your recipe.

This was the only thing that made it out of my kitchen unscathed, thankfully. These definitely don’t count as muffins anymore, not with that caramel sauce. I also may or may not have cut out the tops and scooped some caramel inside the muffins as a filling…

As a Midwesterner, I’m no stranger to rough winters. In Ohio especially, we’ve gotten freak blizzards in April on more than one occasion and a couple years where we had so many snow days the school district almost made us take extra days in the summer.  But something about this winter seems like it’s been especially rough. Maybe it’s because I live in New York now and have to actually trudge through the snow and cold instead of driving around in a heated car everywhere. Or maybe it was Hurricane Sandy and the random snowstorm we had after it that threw everything off kilter. Either way, it feels like it’s been winter forever. Like, what do skirts even feel like? What are open-toed shoes?! But I digress.

To make up for the fact that it’s supposed to be spring but it’s still freezing outside (or maybe it’s just my apartment and its temperamental heating system), I made these festive birds’ nest cupcakes to celebrate a coworker’s birthday. And how cute are they, I mean, seriously.

You know those chocolate covered ice cream cones? Not straight out of the freezer, but after they’ve been out at room temperature for a while, so the chocolate is still hard but the inside ice cream is getting melty? These cupcakes are exactly like that, which is to say – delicious.

I think I’ve been won over by gluten-free baking. Me, lover of gluten, self-confessed gluten groupie! I never thought I’d see the day. Of course, it’s all thanks to chocolate.

And there’s nothing better for a chocoholic than brownies. Much like with chocolate chip cookies, everyone has their own idea of how the texture of brownies should be, either cakey and crumbly, dense and fudgy, or moist and chewy. I am personally a fan of the latter two, though I’ll never say no to a cakey brownie.

Let’s be real – as long as there’s chocolate in it, I’m not turning it down.

A confession: I’ve never decorated sugar cookies. Like, really, legitimately, beautifully decorated them. As a child, I took canned frosting, slathered it on a cookie baked from store-bought cookie dough, and then threw some sprinkles on them and called it a day. But since I started reading food blogs and once I really got into baking, I knew cookie decorating was definitely on my baking bucket list.

So with Valentine’s Day coming up, I figured this would be the perfect occasion to kill two birds with one stone – finally tackle decorating sugar cookies and also try out that brush embroidery technique everyone’s been going nuts over on Pinterest.

I’m happy to report that 2 days later, logging a total of 12 hours, I have succeeded!

(Note to self: you are not Iron Man, you cannot run before you walk, and in fact should probably crawl first, or even just sit on your ass and think about the idea of movement before even attempting it, so the next time you try some newfangled baking thing, try to plan our your time a little better so you’re not up until 2 a.m. decorating cookies. Thank you for your cooperation. Sincerely, yourself.)

These cupcakes are a revelation in gluten-free baking. They’re utterly perfect and taste just as good as my favorite chocolate cupcake that has gluten. Now if only everything gluten-free tasted this good…

In retrospect, the color scheme of these avocado cranberry muffins would have suited December much better, but it’s too late (to apologiiiiizeeeee).

These muffins mark my continued (sort of half-failed) attempts at gluten-free baking. They’re delicious, but they just don’t look like regular muffins, which is a mystery I am determined to solve.
